I am a huge pasta fan, but I’m also trying more and more to eat healthy. So the more vegetables I can combine with my pasta dish, the better. I’m also not a fan of washing dishes… The less dishes I have after cooking a meal, the better. You can therefore imagine my glee when I came across this super simple pasta dish – combining vegetables – and only one pot. Jackpot!
Ingredients (makes 4 portions)
• About 340 grams pasta
• One can crushed tomatoes
• Chopped onion
• 4 sliced garlic cloves
• About 2 cups fresh mushrooms
• Two teaspoons oregano
• A pinch chilli flakes
• A handful of fresh basil
• 4.5 cups vegetable broth
• Two tablespoons olive oil
• Grated parmesan cheese
