A restaurant owner in El Paso County, Colorado is defying state orders by opening up for in-person dining.
As per reports, Karen Starr, owner of Karen’s Kafe and Stephanie’s Bar and Grill on Colorado Avenue in Calhan, El Paso County, believes her constitutional rights are being violated by the state’s “Safer At Home” order.
It’s said El Paso County Public Health has asked her to stop, but she thus far remains defiant.
Starr claims she isn’t doing it to make money, but rather because her loyal customers are like family to her, and so have the right to eat at her restaurant.
Speaking to 11 News on Wednesday, Starr said: “It’s not that we’re going against the governor. We’re going against our constitutional right to assemble.”
The restaurant owner argued that her establishment is a safe place; tables are at least six-feet apart, food is served on paper plates and refills are being given in new paper cups.
When asked by 11 News if she thought taking the stand was worth going to jail for, Starr said: “Absolutely. If I went to jail, it’d be worth it.”
I’m not sure how I feel about Karen’s decision to open her dining room up to the public and defy state orders.
I know times are tough, but it seems as though the best thing we can do for everyone’s well being is to listen to state advice.
