What tops the smell of freshly baked cinnamon buns? Not much if you ask me. Served alongside a nice cup of coffee and some pleasant company and you’re in for pure delight. This recipe is a twist on the classic cinnamon bun, in part due to its, well, massive size. But when it looks this good, I must say bigger is definitely better!
Here’s what you need:
345g flour
3 tbs sugar
1 tsp salt
1 pack of yeast
1/2 cup water
1/4 cup milk
45g butter
1 egg
The filling
45 g butter
1.5 tbs cinnamon
50g sugar
Icing
120 g icing sugar
15 ml milk
1 tsp honey or maple syrup
1 tsp vanilla extract
Stir together the milk, water and butter in a bowl. Then heat the contents in the microwave.
Mix the flour, sugar, salt and yeast in a separate bowl.
Pour the warmed liquid into the bowl.
Add the egg and mix until it forms a smooth dough.
When the dough is smooth and soft, cover the bowl and let it rise for 30 minutes.
In the meantime, start preparing your filling. Mix the sugar and cinnamon.
When the dough is ready, roll it out on a table or counter.
Grease the rolled out dough with the butter, spreading a thin even layer, much like in a sandwich.
Sprinkle your cinnamon and sugar mixture over the dough. Then, using a pizza cutter or knife, start cutting out strips. These should be about 2-3 centimeters wide.
Start by rolling one strip into a little bun.
Place it in the center of your cake pan.
Then continue wrapping your other strips around the roller until you have filled out the entire pan.
When you are done it should look like this. Cover the pan and let rise for 90 minutes. Then bake for 35 minutes at 180 degrees C (350 degrees F)
While your giant bun bakes, start preparing the icing. Pour the powdered sugar, milk, honey, and vanilla extract in a mixing bowl and mix to a smooth and even mixture.
After it’s baked, cover the cake with the icing. I’m crazy about icing so usually add a pretty thick layer, but just how much you want to pour is entirely up to you.
Voilà! Your delicious, creative ‘cinnamon bun cake’ is ready to be enjoyed!
